Carla is the coconut fan of the family … she never makes less than a double batch because a single batch (which makes about two dozen) can be eaten more quickly than it takes to make.
- ½ cup sugar
- 1 egg
- 1 cups sweetened shredded coconut
- 2 tablespoons flour
- ½ teaspoon almond flavoring
Preheat oven to 350 degrees. Whisk sugar and egg together until smooth; stir in coconut, flour and almond flavoring. Mix well. Drop dough by teaspoons onto cookie sheets. Bake at 350 degrees for 10 minutes or until edges of cookies are lightly browned.
