Bess Truman’s Ozark Pudding

When Mom made this, it was always perfect – the rest of us have never been able to get it quite right. As with Grandaddy’s caramels, there may have been some fiddling with the recipe that was never written down. If you’re from the South, you will notice that this is pretty much the same recipe as the one your grandmother used to make Huguenot tortes.

  • 1 egg
  • 1 ½ teaspoon baking powder
  • ½ cup pecans, chopped
  • 1 teaspoon vanilla
  • ¾ cup sugar
  • 2 tablespoons flour
  • ⅛ teaspoon salt
  • ½ cup apple, chopped (use a flavorful and firm variety)
  • ½ teaspoon rum flavoring

Preheat oven to 350 degrees. Generously butter an 8- or 9-inch square pan.

Beat egg and sugar until very smooth. In separate bowl, mix flour, baking powder and salt, then add to egg mix. Add chopped apple, nuts, vanilla and rum. Pour mix into pan, and bake at 350 degrees for 35 minutes. Definitely serve with ice cream or whipped cream.
