Butterscotch Sauce

Works beautifully for ice cream, spice cake, and of course, bread puddings.

  • 1 egg yolk, beaten slightly
  • ⅔ cup brown sugar
  • ⅓ cup corn syrup

In heavy saucepan, combine all ingredients. Cook over low heat until thick. Store in refrigerator, and stir before using. Makes 1 cup.
