Carla was given this recipe by a co-worker whose husband was a chef.
- One pie crust
- 6 eggs
- 1 ½ cups half and half
- Scant cup Swiss cheese, grated
- 1 ½ cups chopped ham or cooked, crumbled bacon
- ½ onion, chopped finely
- Dried or fresh basil to taste
- Salt
- White pepper
Preheat oven to 325 degrees. Line 9-inch pan with pie crust and blind bake. Sauté onions in butter until they have become tender and turned clear. Drain off excess butter. In bowl, combine eggs and half and half; whip two minutes by hand with whisk or at lowest speed in mixer. Fold in ham or bacon and cheese. Season lightly with salt, pepper and basil. Add onion. Pour mix into pie crust. Bake for 30 to 45 minutes or until center is firmly set.
