Reggie’s Quiche

  • One pie crust
  • 2 cups Colby and cheddar cheeses, diced
  • 1 pound pork sausage (or half pound pork sausage, half pound Italian sausage)
  • 2 medium onions, chopped
  • 1 green bell pepper, chopped
  • 1 cup mushrooms, chopped
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon flour

Preheat oven to 375 degrees. Fry sausage and remove from skillet. Sauté onions, green peppers and mushrooms in sausage drippings; remove from skillet and drain. Combine vegetables, sausage, seasoning, flour, and cheese, and place into pie crust. Combine eggs and milk and pour over sausage mix. Bake at 375 degrees for 30 to 45 minutes or until eggs are set.
