Carla’s recipe card says this is from Ruby McIntyre. If this is really from Miss Ruby, the proprietor of Ruby’s Soul Food Cafe in Kansas City, beloved for fried chicken, chitterlings, and peach cobbler, and by generations of cops and jazz musicians, you will want to try this out.
- 2 yeast cakes (not dry yeast)
- 1 cup warm (110 degrees) water
- 2 cups (110 degrees) milk
- ½ cup sugar
- 1 tablespoon salt
- 2 eggs, beaten
- 1 cup salad oil
- 4-5 cups flour
Dissolve yeast in water. After it dissolves, add all other ingredients except flour; slowly add 4 cups of flour, ½ cup at a time, mixing with hands – not a spoon or a mixer. Mix dough until it stiffens, and add the fifth cup if needed. Put bowl in warm place and let rise until doubled. Turn dough onto floured surface and shape as desired; place shaped dough on buttered baking sheet and let rise again.
Preheat oven to 375 degrees. Bake at 375 degrees for 25 to 30 minutes or until tops are light brown.
