Crunchy Peanut Butter Cookies

For Carla, no peanut butter can ever be too crunchy. Nor can any peanut butter cookie.

  • 1 cup butter
  • 1 cup sugar
  • 1 cup light brown sugar, firmly packed
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 cup extra crunchy peanut butter
  • 3 cups flour
  • 2 teaspoons baking soda
  • Dash salt
  • 3 Munch Peanut Bars, finely chopped, or about 1-1/2 cups of See’s Peanut Brittle

Preheat oven to 375 degrees. Cream butter and sugars in stand mixer until fluffy. Beat in eggs and vanilla. Add peanut butter and mix until well blended.

In separate bowl, mix flour, baking soda and salt. Add flour mixture to the butter mixture and blend well. Last, stir in the chopped peanut bars or brittle by hand.

Roll dough into 1-inch balls. Put balls on cookie sheet (which you have definitely lined with parchment paper). If you like, top each cookie with a sprinkle of chopped candy bar or sanding sugar. If you want chewy cookies, bake at 375 degrees for 8 minutes; if you want crispy, bake for 12 minutes.
