It occurs to us, as we flip through our recipes, that we have an awful whole lot of recipes for turtle brownies, turtle bars, turtle cake, and the like. We have a similarly alarming number of recipes for brownies and variations thereto. This recipe, from Carla’s college friend Nathan Mills, is not only easy to make (make a small child feel useful by unwrapping all of the caramels to help you) but the brownies are absolutely delicious. Especially for turtle addicts like us.
- 1 package chocolate cake mix
- 1 ½ sticks butter, melted
- 1 small can evaporated milk
- 1 cup chopped pecans
- 14 ounces caramel squares
- 6 ounces chocolate chips
Preheat oven to 350° degrees. Mix cake mix, butter, ⅓ cup evaporated milk and pecans. Press ⅔ of the mixture into a greased 9 x 13 pan; bake at 350 degrees for 6 minutes. Start melting caramels with ⅓ cup of the evaporated milk, either in a saucepan over low heat or in the microwave, stirring at 10-second intervals. Remove the brownie base from the oven and sprinkle with chocolate chips; pour melted caramels over the top. Crumble the remaining cake mixture over the caramel. Return to oven, and bake for 15 to 20 minutes.
