Summer Vegetable Bake

Hey, here’s another way to use up some of that excess garden zucchini.

  • 1 onion, chopped
  • 2 zucchini, sliced
  • 2 cups fresh corn kernels (about 3 ears)
  • 2 tomatoes (about 2 cups diced)
  • ½ clove garlic, minced
  • ½ to 1 cup Newman’s Own salsa, mild (or similar thick and chunky with recognizable vegetable pieces)
  • 1 cup Monterey Jack cheese, grated

Preheat oven to 350 degrees. In large bowl, toss all ingredients except cheese together. Place into buttered 9 x 13 baking pan. Bake at 350 degrees for 20 minutes.

Remove from oven, sprinkle with the jack cheese, and return to oven to bake for an additional 10 minutes or until cheese melts and starts to bubble.
